Basic Cream and Sultana Scone

今天下午在mall裡的cafe吃到很不satisfactory的scone。texture根本錯誤嘛!Scone不是麵包, 他家的Scone有一半的texture像麵包。真令人不快~
還不如自己做, 簡單又好吃。


這個scone的recipe我也是第一次試, 但是烤出來試吃還真不錯, 可以放在這裡跟大家分享~


Ingredients:
260 gram self raising flour
50 gram sugar
2tsp baking powder
1/4 tsp salt
75g of cold unsalted butter
1 egg
1 tsp vanilla extract
1/2 cup of cream

more cream for glaze
and more flour for making dough
sultana (optional)

Methods:
1. preheat the oven to 190 degrees
2. sift the flour into a large bowl, add in baking powder, sugar, salt, mix well.
3. add cubed cold unsalted butter into the flour mixture and mix using a large spoon
4. mix the egg, vanilla extract, cream and pour into the flour bowl. Fold the flour and cream mixture using spatula. Then knead the mixture using hand.
5. Roll out your dough on to a clean surface, have ready the flour on the side. Flatten the dough to around 3cm thick. Cut out round pieces. I didnt have a cookie cutter, I just used my (1/4 cup) measuring cup. It turned out to be a good size. Scones dont have to have perfect shape...in my humble opinion.

6. For half of my scone mixture I have added some sultana. Turns out I like the ones with sultana better.
7. Brush cream onto the surface of your little scones. I didnt have a brush so I just damped the cream onto the scones using my hand.

After the glazing, place the tray into your oven for 13min ~16 min.
Test whether the scone is cooked properly using a toothpick.

Voila~

Serve the Scone with whipped cream and/or jam.
They taste really nice right out of the oven!
