Carrot Cake

Ingredients:
A.
3 eggs
1 cup of sugar
1 cup of vegetable oil

B.
2 cups of plain flour
1 tsp of baking soda
1 tsp of vanilla bean paste
1/2 tsp of salt
C.
3 cups of shredded carrot
1 cup of walnut

Methods
1. Beat the eggs and sugar first in Ingredients A using Electric mixer, then mix the vegetable oil
2. Add and mix the vanilla bean paste then sift the rest of the Ingredients B into the same bowl
3. Mix the shredded carrot and walnuts using spatula into the big bowl

Bake for 30-40 min at 175 degrees

The Key to this cake is really the cream cheese icing which I got from Curtis Stone

1 pack of cream cheese
90 gram of butter (MELTED)
2-3tsp of milk
2 cups of icing sugar
lemon juice of HALF a lemon
shredded lemon zest
Electric beat the ingredients to apply on the cooled cake.

Cappuccino Cheesecake


Hisashiburi Minasan~

好久不見我的cooking blog.這半年忙著生小孩養小孩, 最近終於有時間尋找到有興趣新recipe來試試看.要不然都被我女兒的乾媽笑說我憑那幾招混了10幾年...

這個cheesecake 包含了本人最愛的cheese以及nuts所以很值得一試, 結果也還不賴.

Ingredients
Base
1 1/2 cup finely chopped almonds and walnuts
2 tbsp sugar
50g butter

Filling (我是做比原始recipe少一半的cheese)
500g cream cheese
1/2 cup sugar
1 1/2 tbsp corn flour(原始recipe是plain flour,但是我為了想做gluten free的蛋糕又一時家裡沒有gluten free plain flour, so I used gluten free cor flour instead)
2 large eggs
1/2 cup sour cream
1 shot of espresso coffee (1/2 tbsp of instant coffee powder)
(1/8 tsp of ground cinnamon -我不愛cinnamon所以沒有放)

Topping
Thickened cream
Drinking Chocolate Powder (Original recipe是說Coffee beans,但我家沒有阿, 既然cappuccino也時有撒chocolate的就用chocolate powder取代吧~)

1. Preheat the oven to 160C

2. Combine nuts, sugar, and butter, press onto bottom of 23 cm springform tin. Bake for 10 minutes, remove from oven to allow to cool.

3. Combine Cream cheese, sugar, and flour, mix with electric mixer ( on medium speed) until well blended. Add eggs one at a time, mix well after each addition. Blend in sour cream.

4. The original recipe dissolves the instant coffee and cinnamon into 1/8 cup of hot water, allow to cool before slowly adding into the cheese mixture. But I used the espresso machine at home, a shot is abit more than 1/8 cup.
Pour the cooled coffee(cinnamon) into the cheese mixture, blend well, pour the mixture over the nut base.

5. Bake for 10 min (230C). Reduce Oven temperature to 120C and continue baking for 1/2 hour (or 1 hour if you are using 1 kg of cream cheese)
Bake in 230C for 6~7 minutes
Then reduce to 120 C for 30 minutes (If using original recipe volume then need to bake for an hour)

烤出來的樣子...不是特別漂亮
還好可以用whipped cream cover up
6. Loosen cake from rim, allow to cool before removing. Chill. Serve topped with whipped cream and sifted chocolate powder (or sprinkled coffee beans)
Whip thickened cream, I used about one small carton of thickend cream and mix on high speed with about 1/2 tbsp of sugar
Over the cream sift chocolate powder (since I dont have coffee beans)
Sour cream原來有著舉足輕重的效果阿~

特別把家裡最漂亮的盤子拿出來照相 XD~

Greek Kourabiedes 希臘甜餅乾

希臘人好像很重口味
這個甜餅乾非常適合跟苦苦的咖啡一起吃
(也請不要吃太多)
做法非常的簡單,只要你跟我一樣喜歡手上有麵糰揉凌


Ingredients
250gram (2cups) plain flour
125gram (1cup) ground ice
125gram (3/4 cup) icing sugar
75 gram (1/2 cup) ground walnuts* (or pistachio nuts)
250gram unsalted butter
extra 125 gram of icing sugar

簡單又健康的雞蛋布丁

材料就只有牛奶跟糖的雞蛋布丁, 給小孩吃也很放心吧~
材料:
焦糖材料:
細砂糖 120 公克
熱水 1/4杯

布丁材料
水 400 公克
蛋 6個
糖 100公克
牛奶 1/2杯

Strawberry Rhubarb Pie

Rhubarb是某種很酸又很多纖維的植物
聽起來就很健康~所以我娘買了一包回來
希望我做出她之前吃過的Rhubarb Pie
做法非常簡單


Basic Pie Base recipe可以從Apple Pie那頁看 (2 cup of plain flour, 3 tbsp of sugar, 1/4 tsp of salt, 3/4 cup of unsalted butter, 1 egg yolk, 2 tbsp of ice water; 200度,20分鐘)

本來沒有打算加入strawberry的, 但是500gram的rhubarb不大夠
現在strawberry又非常便宜所以才會有這個strawberry & rhubarb pie的產生

杏仁薄片餅乾

冰箱裡有三個多出來的蛋白+天氣又冷了起來+杏仁就是很好吃
所以今晚來作杏仁薄片餅乾~
杏仁薄片餅乾是一種很令人慾罷不能的食物,真的真的!
而且在我工具其實很陽春+邊看電視邊做的無效率,吃起來真的是比做起來快很多。


不過在你知道是甚麼讓他如此好吃之後,也許會比較節制的進食

材料:
Butter 125 gram
Sugar 90 gram
Self raising flour 120 gram
egg white 3
pinch of salt
Almond flakes - as much as you like but at least 120 gram

New York Style Cheese Cake


其實我沒有做過new york style cheese cake.
這個Recipe是從 All recipes.com 取得。
第一次試,也不知道好不好吃。這個網站很方便的是你可以依據你想要作的量直接輸入, 請他計算所需ingredient的amount。但要注意的是如果你烤的量比較少, bake的時間當然也比較短。這個網頁並沒有依量減少而提醒你要縮短烤的時間
